Banana Walnut Cake

I remember the first time I ate a very delicious Banana Walnut Cake was made by a colleague from Penang. It was so delicious that thou not a great fan of cooked banana ( I basically hate all cooked fruits) I still remember I ate quite a few pieces of it. And now this colleague of mine, thou still am my colleague but we no longer report to the same manager thus no opportunity to tried his Banana Walnut Cake again.

Thus, the next best thing is made it myself ( with recipe from him!!!) ........

I have to admit that I made a few amendment to his recipe with something I found over the internet ( the wonder of internet!!!!). However, for a first timer in baking cake, this is consider a success.

Here I would like to share it with all of you the final product of my hard work for today......


Ingredients:-
1) 3 cups of self raising flour
2) 250gm butter
3) 4 medium size eggs (beaten)
4) 3 medium bananas ( overripe and cut into small pieces)
5) 2 cups whole walnuts ( baked)
6) 1.5 cups superfine sugar ( you can adjust the level of sweetness according to your preference)
7) 2 teaspoon vanilla essence
8) 1/2 cup whole milk
* use the same cup size throughout the whole measuring process.

Methods:
1) Preheat oven to 180C and grease and line a loaf tin
2) Cream the butter, sugar and vanilla essence.
3) Add eggs, milk, bananas, walnuts and then self raising flour one by one, stirring after each ingredient.
4) Pour the mixture into the tin and bake for 45 minutes.
5) After done, wait until the cake has cool down before cutting.



Best to be enjoyed together with a cup of coffee as afternoon tea together with some besties........... :p
